Thirty years in professional kitchens taught me one thing above all: good food doesn't need to be flashy, it needs to be honest. I moved to Seattle in 1997 and cooked in many of the city's top kitchens before joining Tutta Bella Neapolitan Pizzeria in 2004 as one of its first employees — eventually serving nearly two decades as Executive Chef and Director of Food & Beverage, helping grow it into one of Seattle's most respected restaurant groups. I'm also a certified AVPN Senior Pizzaiolo, recognized by the same Naples-based association that sets the global standard for Neapolitan pizza craft.

With Drift Provisions, I've returned to what I love most: hands-on cooking, real ingredients, and food made for the people eating it — not for a plate going viral. Every meal I make is guided by technique, intuition, and respect for the ingredient in front of me. No shortcuts. No flash. Just honest, quality food, cooked the way it should be.
